While I’m not personally a fan of pickles, I’m VERY much in favor of making pasta noodles out of new and different things, so my two cents is: Awesome! Let’s try pickle juice pasta! Let’s try all the different things. (Relatedly – if you haven’t had zucchini noodles before, give them a try. It’s a great way to get more veggies in your diet, and whatever sauce you put on them will help mask the taste if you don’t like zucchini.)

5 reasons to try alternative pasta noodles
Why do people try non-wheat pasta noodles? Here are the major reasons:
- Keto diet. All the net carbs in traditional wheat pasta are a real downside for people following the Keto diet. That’s why you’ll often see folks on Keto try alternatives like cauliflower noodles (you can also use cauliflower for all kinds of recipes) to still eat the dishes they want without abandoning ketosis.
- Gluten intolerance. The pasta you see every day in the grocery store is made with wheat, which has gluten. Generally speaking, people with a gluten intolerance or celiac’s disease are steering clear from wheat pasta and looking for different formulations (especially chickpea pasta, which in my experience has a fairly similar texture to wheat pasta).
- General health. You don’t have to be on Keto or gluten intolerant to want to reduce your carb intake. As many health-conscious people migrate toward protein and healthy fats, it makes sense that one of the big places to look to reduce carbs will be pasta.
- Adventurousness. If you’re feeling bored, a great way to enliven your kitchen routine is to try a new pasta. One of the best things about this is – since people rarely have just noodles on their own…you can change up the noodles while keeping the sauce the same. Means you’ll have something you recognize paired with the newness.
