This homemade fruit pizza is made with real food ingredients and includes dairy and gluten-free options!
I love fruit pizza!
I have a friend that makes fruit pizza almost every year for 4th of July. The original recipe for this delicious dessert is made with packaged sugar cookie dough, cream cheese, sugar and fruit. I wanted to make this dessert with real food ingredients and with gluten-free and dairy-free options.
I spent all day in the kitchen testing several cookie dough recipes using einkorn and gluten-free flour blends and paleo blends. I also made the cream topping with cream cheese, homemade whipped cream and dairy-free coconut whipped cream.
The fruit pizza recipe below was our favorite cookie dough crust! We made it twice, once with gluten and dairy free ingredients and the other with einkorn flour and real whipped cream. Both turned out wonderful! I’ve also included a grain-free paleo crust recipe that tastes amazing!
How to make healthy fruit pizza
Start with ingredients and equipment. More specifically, you’ll need:
Equipment
- Mixer or Food Processes
- Pizza Pan
- Mixing Bowl
- Rolling Pin
- Parchment Paper
Cookie Crust (Gluten Free)
- 1 3/4 cup flour – I tested this recipe with Unbleached Einkorn Flour and a Gluten Free Flour Blend
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 cup room temperature butter or coconut oil
- 2 tablespoons raw honey
- 1/2 cup coconut sugar or sucanat
- 1 1/2 teaspoons vanilla extract – or make your own
- 1 egg
- 1-3 tablespoons water, divided
Paleo Cookie Crust
- 1/4 cup butter or coconut oil, soft
- 1 egg
- 1/3 cup raw honey
- 1 teaspoon vanilla
- 1 3/4 cup almond flour
- 1/4 cup coconut flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
Topping
- Whipped cream (link to my coconut whipped cream above)
- 1 cup sliced strawberries (organic)
- 1 cup blueberries (organic)
From there, it’s simple and straightforward. For the gluten-free cookie crust, you just:
- Use a large mixing bowl and mix flour, salt, baking powder and baking soda together. Set aside.
- Using a food processor or mixer, mix coconut oil, honey, coconut sugar and vanilla together. Mix until ingredients are combined. Add egg and continue to mix. Slowly add flour mix to wet ingredients. If the dough is crumbly, add 1 tablespoon of water at a time and continue to mix until dough comes together. Cover dough and place in refrigerator for 10-15 minutes.
- Preheat oven to 350 degrees. Line pizza pan with parchment paper. Place cold cookie dough on the pizza pan. Top the dough with another layer of parchment paper. Roll the dough out evenly over the pizza plate. Trim the ends. Place cookie crust into preheated oven and bake for 10-12 minutes, or until crust is golden brown. Let the dough cool completely before topping.
- Once the crust is cooled you can top it with homemade whipped cream or coconut whipped cream. Add fresh fruit of choice. Enjoy!
And for the paleo cookie crust:
- Preheat the oven to 350ºF.
- Mix wet ingredients in a large bowl. In a separate bowl, mix the dry ingredients together, then pour into wet ingredients. Mix into a ball of dough and chill in the fridge for 20 minutes.
- Line a baking sheet or pizza pan with parchment paper and press the cookie dough into the pan and form a round shape.
- Bake for 15-20 minutes, or until golden brown on the edges. Cool before frosting.
- Top with coconut whipped cream and decorate with fresh fruit.
