You can use homemade or canned coconut milk to make this dairy free “buttermilk”. The acid from the vinegar or lemon juice reacts the same way cultured buttermilk acts in baked goods.
- 1 cup homemade coconut milk or canned coconut milk
- 1 tablespoon raw vinegar or lemon juice
- Mix coconut milk and vinegar together and allow to sit for five minutes.
- Store in refrigerator. Use within one week.
